Creamy Egg Yolk Mashed Potatoes
Rich and creamy mashed potatoes made with milk, olive oil, and egg yolk.

Ingredients
- 2 pounds russet potatoes
- salt & freshly ground black pepper
- 2/3 cup whole milk
- 2 large raw egg yolks
Directions
- Peel the potatoes and cut them into 1-inch pieces then place the cut into potatoes into a pot and cover them with cold water about 1-inch over the potatoes.
- Stir 1 tsp of salt into the pot then bring to a boil over medium-high heat.
- When the water begins boiling reduce the heat to medium and cook the potatoes until tender, about 10 minutes, then drain the potatoes and set aside.
- Add the milk to the now empty pot and simmer over low heat, stirring often, until milk is warmed, about 2 minutes.
- Take the pot off the heat then add the cooked potatoes into the pot with the milk.
- Mash the potatoes using a potato masher until well mashed.
- Stir in the egg yolk until well combined.
- Season the mashed potatoes with salt & pepper, stir and taste, then stir in additional salt & pepper if needed.
