Peel the potatoes and cut them into 1-inch pieces then place the cut into potatoes into a pot and cover them with cold water about 1-inch over the potatoes.
Stir 1 tsp of salt into the pot then bring to a boil over medium-high heat.
When the water begins boiling reduce the heat to medium and cook the potatoes until tender, about 10 minutes, then drain the potatoes and set aside.
Add the milk to the now empty pot and simmer over low heat, stirring often, until milk is warmed, about 2 minutes.
Take the pot off the heat then add the cooked potatoes into the pot with the milk.
Mash the potatoes using a potato masher until well mashed.
Stir in the egg yolk until well combined.
Season the mashed potatoes with salt & pepper, stir and taste, then stir in additional salt & pepper if needed.
