Cook the egg noodles according to package directions then drain and set aside.
Preheat the oven to 350°F.
In a large bowl mix together the cottage cheese, sour cream, eggs, salt, and black pepper until combined.
Heat 1 TBSP of the olive oil in a skillet over medium heat then add the onion and garlic to the pan and cook, stirring often, until onion is softened and lightly browned, about 5 minutes.
Stir the onion and garlic in the bowl with the cottage cheese mixture then stir in the cooked noodles until combined.
Brush 1 tsp oil on the inside of an 9x13-inch baking dish.
Spread the noodle mixture into the baking dish then bake in the preheated oven until lightly browned on top, about 40 minutes.
Take the kugel out of the oven and allow to rest for 15 minutes before serving.
