Ingredients
- 2 cups carrots, sliced
- 2 cups cauliflower, 2-3 inch florettes
- 2 cups potatoes, 1 1/2 - 2 inch dice
- 1 cup red onion, 1 1/2 - 2 inch dice
- 1/2 tsp granulated garlic
- 1/4 tsp ground coriander
- 1/2 tsp cilantro leaves
- 1 TBSP curry powder
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp cumin
- dash smoked paprika
- dash red pepper flakes
- 2 TBSP oil

Directions
- Preheat oven to 400 degrees F.
- Toss all ingredients together in a bowl.
- Place on a greased baking sheet.
- Roast in oven 30 minutes, turn pan half way through cooking
