Ingredients

  • 2 cups carrots, sliced
  • 2 cups cauliflower, 2-3 inch florettes
  • 2 cups potatoes, 1 1/2 - 2 inch dice
  • 1 cup red onion, 1 1/2 - 2 inch dice
  • 1/2 tsp granulated garlic
  • 1/4 tsp ground coriander
  • 1/2 tsp cilantro leaves
  • 1 TBSP curry powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • dash smoked paprika
  • dash red pepper flakes
  • 2 TBSP oil



Directions

  1. Preheat oven to 400 degrees F.
  2. Toss all ingredients together in a bowl.
  3. Place on a greased baking sheet.
  4. Roast in oven 30 minutes, turn pan half way through cooking
