INGREDIENTS
8 ounces dried pinto beans, rinsed
8 cups water
1 TBSP ground cumin
1 tsp
chili powder
salt & freshly ground pepper
1 TBSP unsalted butter
1/4 cup finely chopped onion

DIRECTIONS
Stir together the beans, water, cumin, chili powder, and 1/4 tsp salt in a large saucepan or pot over medium-high heat and bring to a rapid boil.
When the water start rapidly boiling place a lid on the pan and reduce the heat to medium-low.
Simmer the beans until very tender, about 1 hour and 45 minutes.
Drain the beans over a large container to reserve all the liquid.
Place the drained beans in a large bowl along with about 1 cup of the reserved liquid.
Mash the beans with a potato masher until mashed very well.
Melt the butter in a large saute pan over medium-high heat.
Add the onion to the pan and cook while stirring for about 1 minute.
Add the beans to the pan and cook while stirring until thickened, about 5 minutes.
If needed, stir in a little more of the reserved liquid until you reach a desired consistency.
Season with salt & pepper to taste.
