INGREDIENTS

  • 8 ounces dried pinto beans, rinsed
  • 8 cups water
  • 1 TBSP ground cumin
  • 1 tsp chili powder
  • salt & freshly ground pepper
  • 1 TBSP unsalted butter
  • 1/4 cup finely chopped onion



DIRECTIONS

  1. Stir together the beans, water, cumin, chili powder, and 1/4 tsp salt in a large saucepan or pot over medium-high heat and bring to a rapid boil.
  2. When the water start rapidly boiling place a lid on the pan and reduce the heat to medium-low.
  3. Simmer the beans until very tender, about 1 hour and 45 minutes.
  4. Drain the beans over a large container to reserve all the liquid.
  5. Place the drained beans in a large bowl along with about 1 cup of the reserved liquid.
  6. Mash the beans with a potato masher until mashed very well.
  7. Melt the butter in a large saute pan over medium-high heat.
  8. Add the onion to the pan and cook while stirring for about 1 minute.
  9. Add the beans to the pan and cook while stirring until thickened, about 5 minutes.
  10. If needed, stir in a little more of the reserved liquid until you reach a desired consistency.
  11. Season with salt & pepper to taste.
