INGREDIENTS

  • 1 1/2 pounds flank or skirt steak, thinly sliced
  • 1 jalapeno, thinly sliced
  • 1 poblano pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 1 TBSP cornstarch
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • salt and freshly ground black pepper
  • 2 TBSP olive oil
  • 1/2 cup water
  • 8 flour tortillas, warmed
  • 1 lime, cut into wedges



DIRECTIONS

  1. In a small bowl mix together the cornstarch, cumin, garlic, paprika, cayenne, 2 tsp salt, and 1/4 tsp black pepper then set aside.
  2. Heat the oil in a cast-iron skillet over high heat until shimmering.
  3. Add the steak, peppers and onion to the skillet and cook, stirring occasionally, about 5 minutes.
  4. Stir in the spice mixture and water and simmer until thickened, about 2 more minutes.
  5. Take off the heat and season with salt & pepper, if needed.
  6. Serve with the warmed tortillas and lime wedges.
