INGREDIENTS
1 1/2 pounds flank or skirt steak, thinly sliced
1 jalapeno, thinly sliced
1 poblano pepper, thinly sliced
1 red bell pepper, thinly sliced
1 large yellow onion, thinly sliced
1 TBSP cornstarch
2 tsp ground cumin
1 tsp garlic powder
1 tsp paprika
1/4 tsp cayenne pepper
salt and freshly ground black pepper
2 TBSP olive oil
1/2 cup water
8 flour tortillas, warmed
1 lime, cut into wedges
CONVERSION CALCULATOR
DIRECTIONS
In a small bowl mix together the cornstarch, cumin, garlic, paprika, cayenne, 2 tsp salt, and 1/4 tsp black pepper then set aside.
Heat the oil in a cast-iron skillet over high heat until shimmering.
Add the steak, peppers and onion to the skillet and cook, stirring occasionally, about 5 minutes.
Stir in the spice mixture and water and simmer until thickened, about 2 more minutes.
Take off the heat and season with salt & pepper, if needed.
Serve with the warmed tortillas and lime wedges.
