Gingered Pork Tenderloin and Cabbage

Ingredients
- PORK:
- 1 1/4 pound pork tenderloin
- 1 TBSP olive oil
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/8 tsp cayenne
- CABBAGE:
- 1 small head green cabbage, cored and roughly chopped
- 1 TBSP olive oil
- 1 TBSP sesame oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Directions
- Preheat the oven to 425°F.
- Place the pork tenderloin in a large mixing bowl then drizzle on the olive oil and sprinkle on the ginger, garlic, salt, pepper, and cayenne. Toss to coat the pork in the oil and spices then place in the center of a large baking sheet.
- Place the chopped cabbage in the bowl then drizzle on the olive oil and sesame oil and sprinkle on the salt & pepper. Toss to coat the cabbage then place on the baking sheet around the pork.
- Bake in the preheated oven for about 30 minutes or until pork has an internal temperature of about 140°F.
- Take out of the oven and allow the pork to sit for 10 minutes before slicing and serving.
