INGREDIENTS
1 pound ground chicken thighs
1 large egg, lightly beaten
1/4 cup breadcrumbs
1 tsp dried sage
1 tsp salt
1/2 tsp black pepper
1/4 tsp onion powder
1/4 tsp dried rosemary
1/4 tsp dried thyme

DIRECTIONS
Add all the ingredients to a large mixing bowl then mix until thoroughly combined.
Divide the mixture into 8 even amounts then form into log shapes roughly 5-inches long by 3/4-inch in diameter.
Cover the sausages and refrigerate for at least 2 hours to allow the mixture to set and flavors to meld.
Fry the sausages in a pan over medium heat, turning often, until well browned on all sides and cooked through, 10 to 12 minutes.
