Indian Spiced Roast Chicken
Tender roasted chicken with crispy skin seasoned with ginger, garlic, curry, garam masala, and cardamom.

Ingredients
- 6 lb whole chicken
- 2 inches ginger, unpeeled sliced
- 4 cloves garlic, unpeeled chopped into 3 pieces
- 1/4 red onion, rough chopped
- 1 1/2 serrano peppers, sliced
- 2 TBSP olive oil
- 1 tsp kosher salt
- 1/2 tsp cardamom, ground
- 1/2 tsp garam masala
- 1/2 tsp curry powder
- 1/2 tsp granulated garlic
- 1/4 tsp black pepper
- 1/4 tsp cumin
- 1/4 tsp coriander

Directions
- Heat the oven to 350 degree F.
- Fill the cavity of the chicken with the ginger, garlic, onion, and serrano pepper.
- In a small bowl mix the olive oil and spices including salt and pepper. Rub the mixture all over the skin and under the skin on to the breast.
- Place the chicken breast side up into a V rack and roast for 1 1/2 hours or until the internal temperature reaches 165 degrees F.
- Allow to rest for at least 10 minutes then carve and serve.
