Indian Spiced Roast Chicken
Servings: 4 to 6

Ingredients
6 lb whole chicken
2 inches ginger, unpeeled sliced
4 cloves garlic, unpeeled chopped into 3 pieces
1/4 red onion, rough chopped
1 1/2 serrano peppers, sliced
2 TBSP olive oil
1 tsp kosher salt
1/2 tsp cardamom, ground
1/2 tsp garam masala
1/2 tsp curry powder
1/2 tsp granulated garlic
1/4 tsp black pepper
1/4 tsp cumin
1/4 tsp coriander
Directions
1. Heat the oven to 350 degree F.
2. Fill the cavity of the chicken with the ginger, garlic, onion, and serrano pepper.
3. In a small bowl mix the olive oil and spices including salt and pepper. Rub the mixture all over the skin and under the skin on to the breast.
4. Place the chicken breast side up into a V rack and roast for 1 1/2 hours or until the internal temperature reaches 165 degrees F.
5. Allow to rest for at least 10 minutes then carve and serve.
