INGREDIENTS

  • 2 TBSP olive oil
  • 1 medium red onion, chopped small
  • 3 medium garlic cloves, chopped small
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1/2 tsp cinnamon
  • salt & pepper
  • 1 pound ground beef
  • 1 pound freshly chopped tomatoes
  • 1/4 cup red wine
  • 1/4 cup water
  • 1 pound spaghetti pasta
  • freshly grated kefalotiri or Parmesan cheese for serving

DIRECTIONS

  1. Heat the oil in a dutch oven over medium-high heat. When the oil is hot add the onion and cook, stirring occasionally, until softened, about 3 minutes.
  2. Stir in the garlic, cloves, allspice, cinnamon, 1 tsp salt, and 1/4 tsp pepper. Add the ground beef and cook, while breaking up the ground beef, until no longer pink, about 5 minutes.
  3. Stir in the tomatoes, red wine, and water. Scrape the bottom of the pan using a wooden spoon to release any stuck on bits and bring to a boil.
  4. Reduce the heat to medium-low and simmer, occasionally stirring and breaking up the chopped tomatoes, until sauce is thickened, 30 to 40 minutes.
  5. While the sauce simmers cook your spaghetti according to package directions.
  6. Taste the sauce and season with additional salt & pepper if necessary. Serve sauce over spaghetti and top with plenty of freshly grated cheese.
