Moroccan Roasted Chicken

Ingredients
- 1 whole chicken (6 lbs)
- 2 TBSP olive oil
- 1 tsp cayenne pepper
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- 1 tsp ground black pepper

Directions
- Preheat the oven to 450°F. Line a rimmed baking sheet with parchment paper.
- Pat the chicken dry with paper towels and place on the lined baking sheet breast side up.
- Mix the oil and spices together in a bowl then rub the spice mixture all over the outside of the chicken and under the skin of the breasts as best as you can.
- Roast the chicken in the oven for 20 minutes then reduce the heat to 375°F and roast for 45 to 60 more minutes or until chicken is cooked through (165°F internal temperature).
- Take the chicken out of the oven and allow to rest for 15 minutes before slicing and serving.
