In a large mixing bowl mix together the beef, pork, breadcrumbs, egg, onion, miso, and soy sauce until well combined.
Press the meat mixture evenly into an 8x4-inch loaf pan then cover and refrigerate for at least 2 hours (up to 24 hours) to allow the flavors to meld.
Take the meatloaf out of the refrigerator and set aside.
Preheat the oven to 375°F.
Line a rimmed baking foil then place a wire baking rack on top.
Uncover the meatloaf then flip the loaf pan upside down onto the baking rack and shake to release the meatloaf onto the baking rack, you may need to run a butter knife along the edges of the loaf pan to help release the meatloaf.
Bake the meatloaf in the preheated oven for 1 hour and 15 minutes.
In a small bowl mix together the glaze ingredients (honey and miso) until well combined then cover and set aside.
Take the meatloaf out of the oven then brush the miso glaze on top.
Return the meatloaf to the oven and continue to bake for 10 more minutes or until the meatloaf is cooked through (about 160°F internal temperature).
Take the meatloaf out of the oven and allow to rest for 15 minutes before slicing.
