Slow Cooker Cajun Pork and Collard Greens
Cajun spiced pork loin and collard greens braised in butter.

Ingredients
- 1 TBSP oil
- 3 lb pork loin roast
- 2 TBSP Cajun seasoning
- 1 tsp kosher salt
- 1 bunch collard greens, stem removed
- 4 TBSP unsalted butter
- 2 shallots, peeled and diced small
- 4 cloves garlic, peeled and chopped
- 1/4 tsp thyme
- pinch red pepper flakes
- 1 dash liquid smoke
Directions
- Heat a large pan over high heat and add the oil.
- As the pan warms rub the pork loin with Cajun seasoning and salt.
- Add the pork to the pan and sear on all sides.
- Cut the each collard greens in half lengthwise and remove the hard vein. Roll them up and slice them about 1/4 in wide. Place them in the bottom of the slow cooker then place the seared pork on top of the greens.
- Melt the butter in the same pan you seared the pork and add the shallots, garlic, thyme, red pepper flakes, liquid smoke. Stir together and pour directly over the pork.
- Place the lid on the slow cooker and cook on low for 5-6 hours.
- Pull out the pork and cover with foil and allow to rest for 10 minutes.
- Slice the pork and serve with the greens.
