Mix the milk and liquid smoke together in a small bowl. Mash the bread cubes in the milk mixture and let sit 5 minutes or until bread soaks up all the liquid.
In a large mixing bowl using your hands mix the soaked bread, ground beef, ground pork, lightly beaten egg, garlic powder, onion powder, salt and pepper until well combined.
Form the mixture into a loaf about 4x7x3 inches. Wrap with aluminum foil and refrigerate for at least 1 hour.
Preheat oven to 350° F. Remove the foil and place the meatloaf on a flat wire rack on top of a baking sheet.
Bake in the preheated oven for about 1 1/2 hours or until an internal temperature of 155° F.
Top the meatloaf with the shredded smoked cheddar cheese and bake 5 more minutes. Remove meatloaf from oven and allow to rest 10 minutes before serving.
