INGREDIENTS
8 ounces uncooked elbow macaroni
3 TBSP unsalted butter
3 TBSP all-purpose flour
1/4 tsp dry mustard
1/4 tsp cayenne pepper
salt & freshly ground black pepper
2 cups whole milk
4 ounces sharp cheddar cheese, shredded
4 ounces Monterey jack cheese, shredded
CONVERSION CALCULATOR
DIRECTIONS
Cook the pasta in a medium-size saucepan according to package directions then drain and set aside.
In the now empty pan melt the butter over medium heat then stir in the flour, mustard, cayenne, and 1/2 tsp salt until combined.
Slowly stir in the milk and cook, stirring often, until the mixture comes to a slight boil.
Reduce the heat to low then stir in the cheeses until melted.
Stir the cooked macaroni into the sauce then taste and season with additional salt & pepper if needed.
