Ingredients

  • 1 TBSP plus 4 TBSP melted unsalted butter
  • 2 large eggs, beaten
  • 3 large ripe bananas, peeled and well mashed
  • 1 tsp pure vanilla extract
  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup crushed walnuts



Directions

  1. Preheat the oven to 350°F and butter the inside cups of a 12-cup muffin pan with 1 TBSP of the melted butter.
  2. In a large mixing bowl stir together the 4 TBSP melted butter, eggs, bananas, and vanilla until well combined.
  3. Stir in the flour, baking powder, salt, cinnamon, and walnuts until well combined.
  4. Spoon the batter evenly into the 12 muffin cups then use a spatula to spread the batter evenly in the muffin cups.
  5. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 20 minutes.
  6. Take the muffins out of the oven and let cool for about 10 minutes before taking them out of the muffin pan.
