- 1 TBSP plus 4 TBSP melted unsalted butter
- 2 large eggs, beaten
- 3 large ripe bananas, peeled and well mashed
- 1 tsp pure vanilla extract
- 2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup crushed walnuts

Directions
- Preheat the oven to 350°F and butter the inside cups of a 12-cup muffin pan with 1 TBSP of the melted butter.
- In a large mixing bowl stir together the 4 TBSP melted butter, eggs, bananas, and vanilla until well combined.
- Stir in the flour, baking powder, salt, cinnamon, and walnuts until well combined.
- Spoon the batter evenly into the 12 muffin cups then use a spatula to spread the batter evenly in the muffin cups.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 20 minutes.
- Take the muffins out of the oven and let cool for about 10 minutes before taking them out of the muffin pan.
