Heat a small skillet over medium heat. When the pan is hot add the pine nuts and cook, stirring often, until lightly browned, 2 to 3 minutes. Transfer the toasted pine nuts to a plate and set aside.
Add the spinach, lemon juice, and olive oil to a large bowl and toss to combine.
Add the toasted pine nuts and grated Parmesan to the bowl and toss again.
Season with salt & freshly ground black pepper to taste.
