INGREDIENTS
1/4 cup pine nuts
5 ounces fresh baby arugula
1 TBSP fresh lemon juice
2 TBSP olive oil
1/4 cup freshly grated Parmesan cheese
salt & freshly ground black pepper
CONVERSION CALCULATOR
DIRECTIONS
Place the pine nuts in a skillet over medium heat and cook, stirring often, until lightly browned, 2 to 3 minutes.
Place the toasted pine nuts in a large bowl. Add the arugula, lemon juice, and olive oil and toss to combine.
Sprinkle the Parmesan on top then season with salt & freshly ground black pepper to taste.
