Cottage Cheese Polenta
Cornmeal cooked in butter, milk, and water and finished with creamy cottage cheese and fresh basil.

Ingredients
- 2 cups milk
- 3 cups water
- 2 TBSP butter
- 1 cup yellow cornmeal
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup cottage cheese
- 1 TBSP chopped fresh basil
Directions
- In a 2-quart saucepan bring milk, water, and butter to a low boil over medium heat.
- Whisk in cornmeal, salt, and pepper and whisk until thoroughly combined.
- Turn heat to low and cook, stirring often with a wooden spoon or spatula, for about 15 minutes.
- Stir in the cottage cheese and cook for 5 minutes more, stirring continuously.
- Stir in the basil and then serve.
