Garden Veggie Burgers
Homemade garden burgers with beans, oats, water chestnuts, and plenty of vegetables.

Ingredients
- 2 cups rolled oats
- 1 cup canned red beans, pureed
- 2 TBSP soy sauce
- pinch pepper
- 1/2 tsp salt
- 1 TBSP oil
- 1/2 cup diced bell pepper
- 1 cup chopped mushrooms
- 1/2 cup chopped yellow onion
- 1/2 cup grated carrots
- 1/4 cup sliced water chestnuts
- 1 TBSP chopped parsley
- 1/2 tsp paprika
- 1/4 tsp smoked paprika
- 1/8 tsp dried oregano
- 1 TBSP granulated garlic
- 1/4 cup oil
- 6 burger buns
- optional toppings: lettuce, tomato, onion, etc.
Directions
- In a large mixing bowl combine the oats, beans, soy sauce, pepper, and salt.
- Heat a 10-inch skillet over high heat and add the oil. Saute the pepper, mushrooms, onion, and carrots for about 5 minutes or until tender. Allow to cool for 5 minutes.
- Add the cooked vegetables, water chestnuts, parsley, paprika, smoked paprika, oregano, and garlic to the bean mixture and mix well.
- Form the mixture into 6 patties roughly the same size as your burger buns.
- Heat the oil in a skillet over medium heat. Add the patties and brown well on both sides, about 4 minutes per side.
- Place the burgers on the buns and serve with your favorite toppings.

Good flavor, I would prefer to leave the water chestnuts out next time or maybe chop them up.
