INGREDIENTS

  • 1 cup canned red beans, drained
  • 2 cups rolled oats
  • 2 TBSP soy sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 TBSP plus 4 TBSP olive oil
  • 1/2 cup diced bell pepper
  • 1 cup chopped mushrooms
  • 1/2 cup chopped yellow onion
  • 1/2 cup grated carrots
  • 1/4 cup sliced water chestnuts
  • 1 TBSP chopped parsley
  • 1/2 tsp paprika
  • 1/4 tsp smoked paprika
  • 1/8 tsp dried oregano
  • 1 TBSP garlic powder
  • 6 burger buns
  • optional toppings: lettuce, tomato, onion, etc.



DIRECTIONS

  1. Use a potato masher to mash the beans well.
  2. In a large mixing bowl combine the mashed beans, oats, soy sauce, pepper, and salt.
  3. Heat a large skillet over high heat then add 1 TBSP of the olive oil and saute the pepper, mushrooms, onion, and carrots for about 5 minutes or until tender. Allow to cool for 5 minutes.
  4. Add the cooked vegetables, water chestnuts, parsley, paprika, smoked paprika, oregano, and garlic to the bean mixture and mix well.
  5. Form the mixture into 6 patties roughly the same size as your burger buns.
  6. Heat 4 TBSP of olive oil in the skillet over medium heat.
  7. Add the patties and brown well on both sides, about 4 minutes per side.
  8. Place the burgers on the buns and serve with your favorite toppings.

Good flavor, I would prefer to leave the water chestnuts out next time or maybe chop them up.
