In a large mixing bowl stir together the yeast, honey and water.
Add 1 TBSP of the oil, the salt, and the flour and mix until well combined and a dough is formed.
Knead the dough by hand while in the bowl until the dough is smooth and elastic, about 10 minutes.
Form the dough into a ball then drizzle though with 1 tsp of oil and flip the dough around to coat.
Loosely cover the bowl and put in a warm place to rise, about 30 minutes.
THE TOPPINGS AND ASSEMBLY:
Preheat the oven to 450°F.
Cook the bacon pieces in a skillet over medium heat until crispy then set the bacon on a paper towel lined plate and set aside.
Discard all the bacon fat except 1/2 tsp from the pan, Add the spinach to the pan over medium heat and cook for 3 minutes then stir in the garlic and cook for 15 more seconds or until fragrant.
Transfer the spinach to a bowl then stir in the 1 TBSP of olive oil.
Stretch the dough out onto a lightly oiled 16-inch pizza pan or 13x18-inch baking sheet.
Spread the spinach mixture onto the dough then sprinkle on the mozzarella and Parmesan cheese and top with the chopped artichokes and cooked bacon.
Bake in the preheated oven for 15 to 17 minutes or until crust is golden brown.
