INGREDIENTS
4 pounds bone-in skin-on chicken thighs
2 TBSP paprika
1 TBSP onion powder
1 TBSP garlic powder
2 tsp salt
1 tsp ground black pepper
1 tsp dried oregano
1/4 tsp cayenne pepper

DIRECTIONS
Pat the chicken thighs dry with paper towels and set aside.
Mix the remaining ingredients (paprika, onion, garlic, salt, pepper, oregano, cayenne) together in a bowl until well combined.
Rub the seasoning mix all over the chicken thighs.
Place the chicken thighs skin-side up on a wire rack above a baking sheet then place in the refrigerator, uncovered, for about 4 hours.
Preheat the oven to 425° F.
Take the chicken thighs out of the fridge and set aside.
When the oven is preheated place the chicken thighs in the oven and bake for 20 minutes.
Increase the oven temperature to 500°F and cook for 5 to 10 more minutes or until chicken is cooked through.
Allow the chicken to cool for 10 minutes then serve warm or refrigerate and serve cold.
