INGREDIENTS

  • 8 ounces gemelli pasta
  • 1 1/2 cups small broccoli florets
  • 3 TBSP unsalted butter
  • 3 TBSP all-purpose flour
  • salt & freshly ground black pepper
  • 2 1/2 cups whole milk
  • 4 ounces cream cheese, softened
  • 4 ounces sharp cheddar cheese, shredded



DIRECTIONS

  1. Cook the pasta according to package directions, adding the broccoli florets in with the pasta about 2 minutes before the pasta is finished cooking.
  2. Drain the pasta and broccoli then set aside.
  3. Melt the butter inn a medium-size saucepan over medium heat.
  4. Stir the flour, 1/2 tsp salt, and 1/4 tsp black pepper in with the butter until well combined.
  5. Stir in the milk and cook, stirring often, until milk comes to just a slight boil.
  6. Reduce the heat to low then stir in the cream cheese and cheddar cheese a little at a time until the cheeses are melted and fully incorporated.
  7. Take the pan off the heat and stir in the gemelli pasta and broccoli then season with salt and pepper to taste.

Loved this recipe. Only thing I would add is after adding the pasta and broccoli to the sauce put the pan back over low heat so the frozen broccoli heats thoroughly. I also added more broccoli than the recipe called for. Maybe my broccoli pieces were big, but 1 1/2 cups didn't go very far.
