1. Pat the wings dry with paper towels. Mix the remaining ingredients in a large bowl, add the wings and toss with your hands to coat.
2. Place wings on wire baking racks above two foil lined baking sheets. Refrigerate uncovered for 8 hours, make sure they're uncovered in the fridge so they dry out, which helps them crisp up in the oven.
2. Preheat the oven to 250°F. Bake wings for 30 minutes in the preheated oven, rotating the baking sheets after 15 minutes.
3. Turn the oven heat up to 425°F and bake for 1 more hour, rotating the baking sheets after 30 minutes.
