Korean Ground Beef and Quinoa Bowls

Ingredients
- 1 cup uncooked quinoa, rinsed thoroughly
- 2 cups water
- 3 TBSP soy sauce
- 1 TBSP rice vinegar
- 2 tsp sesame oil
- 2 tsp freshly minced ginger
- 2 medium garlic cloves, peeled and minced
- 1/2 tsp crushed red pepper flakes
- 1 pound ground beef
- 2 green onions, thinly sliced
- 1 tsp sesame seeds

Directions
- Add the quinoa and water to a medium size saucepan over medium-high heat and bring to a boil.
- Reduce the heat to medium-low and simmer, uncovered and stirring occasionally, for about 20 minutes.
- Take the pan off the heat and cover with a tight fitting lid then set aside for about 10 minutes while you cook the beef.
- In a small bowl mix together the soy sauce, rice vinegar, sesame oil, ginger, garlic, and crushed red pepper the set aside.
- Heat a large wok or skillet over medium-high heat.
- Add the ground beef to the wok and cook, breaking up the beef as it cooks, until well browned, about 7 minutes.
- Pour the sauce into the pan and continue to cook, stirring often, for about 2 minutes.
- FLuff the quinoa with a fork then serve in bowls topped with ground beef, green onion, and sesame seeds.
