Fresh Cherry Buttermilk Pancakes

Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 cup buttermilk
- 1 large egg
- 1 TBSP unsalted butter, melted
- 1 tsp pure vanilla
- 4 ounces fresh cherries, pitted and chopped

Directions
- In a large mixing bowl mix the flours, baking powder, baking soda, and salt.
- In a separate bowl mix the buttermilk, egg, butter, and vanilla until well combined and the egg is beaten.
- Pour the liquid ingredients into the dry ingredients and stir together until combined then stir in the chopped cherries.
- Heat a griddle to 350°F.
- Scoop the batter in 1/4-cup portions onto the hot griddle. Once the pancakes have a few bubbles on top flip them over and cook on the other side, about 3 minutes per side.
- Makes about 10 pancakes.
