INGREDIENTS
2 to 3 lb pork loin roast
1 large yellow onion, thinly sliced
6 hamburger buns or split rolls
For the Pineapple BBQ Sauce:
6 ounces
tomato paste
3 TBSP soy sauce
1 clove garlic, chopped
2 cups diced frozen or fresh pineapple
1 tsp liquid smoke
1 TBSP honey
1 cup water
1/4 cup apple cider vinegar
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
For the Pineapple Slaw:
2 cups thinly sliced cabbage
1 cup thinly sliced red onion
1/2 cup diced pineapple
1 tsp Dijon mustard
1/4 cup sour cream
1/4 tsp black pepper
dash of salt

DIRECTIONS
Lay the yellow onion slices on the bottom of a slow cooker and place the pork loin on top.
Add the BBQ sauce ingredients to a blender and pulse until thoroughly combined.
Pour the BBQ sauce over top of the pork, place a lid on the slow cooker and cook on high for 6 hours or low for 8 hours, or until pork is tender.
In a large mixing bowl combine the slaw ingredients, cover and refrigerate until ready to use.
When pork is cooked shred with two forks and stir.
Serve the pulled pork on buns with the pineapple slaw.
