INGREDIENTS
2 1/2 pound boneless pork shoulder
1 large yellow onion, thinly sliced
6 hamburger buns or split rolls
PINEAPPLE BBQ SAUCE:
6 ounces
tomato paste
3 TBSP soy sauce
1 medium garlic clove, chopped
2 cups diced frozen or fresh pineapple
1 tsp liquid smoke
1 TBSP honey
1 cup water
1/4 cup apple cider vinegar
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
PINEAPPLE SLAW:
2 cups thinly sliced cabbage
1 cup thinly sliced red onion
1/2 cup diced pineapple
1 tsp Dijon mustard
1/4 cup sour cream
1/4 tsp black pepper
dash of salt
CONVERSION CALCULATOR
DIRECTIONS
Lay the yellow onion slices on the bottom of a slow cooker and place the pork on top.
Add the BBQ sauce ingredients to a blender and pulse until thoroughly combined.
Pour the BBQ sauce over top of the pork, place a lid on the slow cooker and cook on high for 6 hours or low for 8 hours, or until pork is tender.
In a large mixing bowl combine the slaw ingredients, cover and refrigerate until ready to use.
When pork is tender, shred the pork with two forks then stir and season with salt & pepper to taste..
Serve the pulled pork on buns with the pineapple slaw.
