Loaded Baked Cauliflower
Cauliflower pieces that are baked and topped with cheese, pork, sour cream, and scallions. Great as a quick appetizer or side dish.

Ingredients
- 1 TBSP oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 head cauliflower, cut into 1/4-inch-thick slices
- Garnishes:
- 1/2 cup cheddar cheese, shredded
- 1/4 cup sour cream
- 3 slices cooked homemade bacon crumbled
- 1/4 cup scallion greens, sliced
Directions
- Heat the oven to 450 degrees F.
- Stir oil, salt, and pepper together in a large bowl. Add cauliflower slices and gently toss to coat. Carefully lay the cauliflower in a single layer on to a baking sheet and roast until tender, 10 to 12 minutes.
- Top with cheese, return to the oven and roast until the cheese has melted, 1 to 2 minutes.
- Top each cauliflower slice with a drizzle of sour cream and sprinkle with pork (or bacon) and scallion greens.
