Loaded Baked Cauliflower

Cauliflower pieces that are baked and topped with cheese, pork, sour cream, and scallions. Great as a quick appetizer or side dish.

Loaded Baked Cauliflower recipe


servings: 3-4

Ingredients

  • 1 TBSP oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 head cauliflower, cut into 1/4-inch-thick slices
  • Garnishes:
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup sour cream
  • 3 slices cooked homemade bacon crumbled
  • 1/4 cup scallion greens, sliced

Directions

  1. Heat the oven to 450 degrees F.

  2. Stir oil, salt, and pepper together in a large bowl. Add cauliflower slices and gently toss to coat. Carefully lay the cauliflower in a single layer on to a baking sheet and roast until tender, 10 to 12 minutes.

  3. Top with cheese, return to the oven and roast until the cheese has melted, 1 to 2 minutes.

  4. Top each cauliflower slice with a drizzle of sour cream and sprinkle with pork (or bacon) and scallion greens.
