An easy cream cheese based dip made with roasted beets, chives and lemon juice.

Ingredients

  • 2 medium beets, washed and ends cut off
  • 8 ounces cream cheese, softened
  • 1 TBSP freshly squeezed lemon juice
  • 2 tsp freshly chopped chives
  • salt & pepper
  • Crackers, pita chips, cut veggies, etc. for serving

Directions

  1. Preheat oven to 350°F.

  2. Wrap the beets tightly in aluminum foil. Place the wrapped beets in the preheated oven and roast for 1 hour or until tender. Unwrap the beets and allow to cool. When beets are cool, peel off the skin and roughly chop.

  3. Add the beets, cream cheese, lemon juice, and 1/4 tsp salt to a food processor and pulse until smooth.

  4. Transfer beet mixture to a bowl and stir in the chives. Season with salt and pepper to taste.
