DIRECTIONS
Preheat oven to 350°F.
Wrap the beets tightly in aluminum foil. Place the wrapped beets in the preheated oven and roast for 1 hour or until tender. Unwrap the beets and allow to cool. When beets are cool, peel off the skin and roughly chop.
Add the beets, cream cheese, lemon juice, and 1/4 tsp salt to a food processor and pulse until smooth.
Transfer beet mixture to a bowl and stir in the chives. Season with salt and pepper to taste.
