INGREDIENTS
1 cup warm water
1 packet (2 1/4 tsp) active dry yeast
3 cups all-purpose flour
1/2 tsp salt
1 TBSP plus 1 TBSP olive oil
ZA'ATAR SPREAD:
1 TBSP dried thyme
1 TBSP toasted sesame seeds
1 TBSP sumac
1 TBSP ground cumin
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/4 cup olive oil

DIRECTIONS
In a large mixing bowl stir together the warm water and yeast until well combined.
Stir in the flour, salt, and 1 TBSP of olive oil until combined and a dough is formed.
Knead the dough for a few minutes by hand until the dough can be formed into a smooth ball.
Drizzle the dough ball with 1 TBSP of olive oil then flip the dough around a few time to coat in the oil.
Loosely cover the bowl then set aside in a warm place to rise for about 1 hour.
Preheat the oven to 450°F.
Roll the dough out into a circle roughly 14-inches in diameter then place it onto a large lightly oiled pizza pan.
In a bowl stir together all the zaatar spread ingredients (thyme, sesame seeds, sumac, cumin, salt, pepper, and olive oil) until well combined.
Spread the zaatar spread all over the dough then bake in the preheated oven for about 12 minutes or until the dough is lightly browned on the edges.
Slice and serve.
