INGREDIENTS

  • 1 TBSP olive oil
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 large egg, lightly beaten
  • 1 cup plain whole milk Greek yogurt
  • 10 ounces mango chunks, mashed very well
  • 1 TBSP raw honey



DIRECTIONS

  1. Preheat the oven to 375°F.
  2. Brush the inside of a 8x4-inch loaf pan generously with the olive oil.
  3. In a large mixing bowl stir together the flour, baking soda, ginger, cinnamon, and salt until well combined.
  4. Add the egg, yogurt, mango, and honey to the bowl the stir until everything is very well combined.
  5. Scrape the batter into the loaf pan and spread evenly then bake in the preheated oven for 1 hour.
  6. Transfer the bread from the loaf pan to a wire rack and allow to cool for 30 minutes.
