Turkey Sliders with Slaw and Fresh Pickles
Mini turkey burgers are topped with apple-coleslaw and quick sweet and sour pickles.

Ingredients
- Quick Pickles:
- 1/2 cup rice vinegar
- 1/2 cup water
- 1/4 tsp kosher salt
- 1/4 tsp ginger chopped
- 1/4 tsp honey
- 1/2 jalapeno, sliced thinly
- 1 green onion, white part only, sliced thinly
- 1/2 seedless cucumber, sliced 1/8 inch diagonally (16 slices)
- 1/4 tsp lime zest
- Burgers:
- 1 lb ground turkey
- 1/2 tsp cumin
- 1/4 coriander, ground
- 1/2 tsp kosher salt
- Slaw:
- 1 green onion, green part, sliced thinly
- 1 cup apple, julienne cut
- 1 cup shredded cabbage
- 1 tsp lime juice
- 1/4 cup mayonnaise
- pinch salt
- Extras:
- 8 slider buns

Directions
- Pickles: In a small pot bring the rice vinegar, water, salt, ginger, red pepper flakes, and honey to a boil. Put the sliced cucumber, jalapeno, lime zest, and green onion in a narrow jar. Pour the boiling liquid over the cucumbers and set the jar in the refrigerator until ready to serve the sliders.
- Burgers: Turn on the broiler. In a small bowl combine the turkey, cumin, coriander, 1/4 tsp red pepper flakes, and salt and mix well. Patty 8 burgers 2 inches diameter. Broil for 3-5 minutes per side or until fully cooked.
- In another small bowl combine the apple, cabbage, lime juice, and mayonnaise with the pinch of salt and stir well.
- Open all the slider buns. Place 1 patty on top of each bottom bun, top with 2 slices of pickle, then divide the coleslaw evenly over the pickles, top each with a top bun and serve.
