Cook the spaghetti according to package directions in a large pot of boiling water with about 2 tsp salt then drain the pasta, reserving 1/2 cup of the pasta water.
While the pasta cooks: Cook the pork belly in a pan over medium-high heat, stirring often, until the pork is crisp, about 6 minutes, then add the garlic and stir until fragrant, about 10 seconds.
In a large bowl whisk together the egg, egg yolks, Asiago cheese, 1/2 tsp salt, and 1/4 tsp black pepper.
Add the spaghetti, pork (along with any drippings from the pan), and the reserved pasta water in with the egg mixture then stir until everything is well combined and creamy.
