Shrimp Scampi
Shrimp cooked in a garlic butter sauce with fresh lemon juice, parsley and a hint of crushed red pepper.

Ingredients
- 3 TBSP plus 1 TBSP unsalted butter
- 1 TBSP olive oil
- 1 pound large peeled and deveined raw shrimp, tails removed
- 4 medium garlic cloves, minced
- 2 TBSP fresh lemon juice
- 1/8 tsp crushed red pepper flakes
- salt & pepper
- 2 TBSP freshly chopped parsley
- crusty bread and/or cooked pasta for serving
Directions
- Melt the 3 TBSP of butter with the oil in a large saute pan over medium-high heat.
- Add the shrimp to the pan and cook, stirring often, for about 2 minutes.
- Add the garlic, lemon juice, and crushed red pepper to the pan then season generously with salt & pepper. Cook while stirring until shrimp are cooked through (pinkish white in color), about 2 more minutes.
- Take the pan off the heat and stir in the parsley and remaining 1 TBSP of butter until melted. Taste and season with additional salt & pepper if necessary.
- Serve with crusty bread and/or cooked pasta.
