An easy crock-pot chili made with dried black beans, farro, onion, pepper, and spices.

Slow Cooker Black Bean and Farro Chili recipe

Ingredients

  • 1 cup dried black beans, rinsed
  • 1 cup uncooked farro, rinsed
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 pounds roma tomatoes, chopped
  • 1/4 cup paprika
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 cups water
  • salt and freshly ground black pepper
  • OPTIONAL TOPPINGS:
  • shredded cheddar cheese
  • diced onion
  • sliced jalapeno
  • sour cream
  • tortilla chips




Directions

  1. Add all the ingredients including 2 tsp salt and 1/2 tsp black pepper to a 6-quart slow cooker and stir to combine.

  2. Place the lid on the slow cooker and cook on LOW for about 7 hours or until beans are tender.

  3. Take the lid off and stir the chili then taste and season with additional salt & pepper if needed.
