Slow Cooker Sunday Sauce

Italian comfort food at it's best, this recipe uses ribs and sausages but any pork or beef will do.

Ingredients

1 TBSP cooking oil
2 lbs country style ribs
1 lb Italian sausage links
2 TBSP tomato paste
3 cloves garlic, minced
2 onions, chopped
2 28oz cans crushed tomatoes
1 tsp dry oregano
1/2 tsp dry basil
salt & pepper
1 lb spaghetti or other pasta
fresh baked Italian bread
fresh grated Parmesan

Directions

1. In a dutch oven or large pan heat the oil over medium-high until shimmering. Cook ribs until nicely browned on all sides, about 10 minutes, remove and set aside. Brown the sausages, about 2 minutes, remove and set aside.

2. Reduce heat to medium and add the onions to the pan. Cook, stirring occasionally, about 5 minutes. Remove onions and place in the bottom of the slow cooker. Place the ribs and sausage on top of the onions.

3. Add the tomato paste and garlic to the empty pan, still over medium heat, and cook for 30 seconds or until fragrant. Carefully pour in the crushed tomatoes, oregano, basil and 1 tsp salt. Scrape the bottom of the pan with a wooden spoon or spatula to release any stuck on bits.

4. When sauce begins to boil take off the heat and pour into the slow cooker over top of the meats. Cover the slow cooker and set to low, cook for 8 to 10 hours or until meats are tender. Salt and pepper to taste.

5. Cook your pasta and serve the sauce over top. Sprinkle on fresh grated Parmesan and serve with fresh baked crusty Italian bread to sop up the sauce.
