1 1/2 lbs boneless pork loin cut into 1-inch pieces
1 TBSP peanut oil
1 medium red onion, diced
1 medium carrot, diced
4 cups water
1 cup uncooked brown lentils, thoroughly rinsed
DIRECTIONS
In a large mixing bowl combine the paprika, garlic powder, 1 tsp salt, and 1/4 tsp pepper. Pat the pork pieces dry with a paper towel, place the pork in the bowl with the spices and toss to coat.
Heat the oil in a dutch oven over medium-high heat. When the oil is hot add the pork and Cook, stirring occasionally, until pork is browned, about 8 minutes.
Stir the onion and carrot in with the pork and cook until softened, about 3 minutes.
Stir in the water and using a wooden spoon scrape the bottom of the pan to release any stuck on bits. Bring to a boil then place a lid on the dutch oven and reduce the heat to medium-low. Simmer, stirring occasionally, for 30 minutes.
Stir in the lentils and return to a boil then simmer over medium-low heat, uncovered, for 35 to 45 more minutes or until lentils are tender.
