Spicy Cabbage and Garlic Soup with Ham

Ingredients
1 TBSP olive oil
1 large yellow onion, diced (about 2 cups)
2 medium carrots, sliced (about 1 cup)
2 ribs celery, diced (about 1/2 cup)
5 cloves garlic, minced
1 small head of cabbage, chopped (around 6 to 8 cups)
1 jalapeno, stemmed seeded and diced
8 oz diced cooked ham
6 cups chicken broth
salt & pepper
Directions
1. Heat the oil over medium-high heat in a dutch oven or large pot. Add the onions, carrots and celery and cook for 5 minutes, stirring occasionally.
2. Stir in the garlic and cook for 30 seconds or until garlic becomes fragrant. Stir in the cabbage, jalapeno, ham, 1/2 tsp salt and 1/2 tsp pepper.
3. Stir in the chicken broth and bring to a boil. Reduce heat to low, cover and simmer stirring occasionally until cabbage is tender, about 20 minutes.
