Spicy Smoked Sausage & Potato Soup

Total Time: 4 to 5 hours
Ingredients
1 lb smoked sausage, diced
1 large yellow onion, diced
1 lb Yukon gold potatoes, diced
3 cups chicken broth
1/2 cup heavy cream
2 cups shredded sharp cheddar cheese
1/2 tsp cayenne pepper
3 TBSP cornstarch
3 TBSP water
salt & pepper
Directions
1. Cook the diced sausage and onion in a large pan over medium-high heat until the onion is softened and the sausage begins to brown, 6 to 8 minutes.
2. Add the sausage and onion mix to the slow cooker along with the diced potatoes and chicken broth.
3. Cover and cook on low for 4 to 5 hours or until potatoes are tender.
4. Stir in the heavy cream, cheddar cheese, and cayenne, stir until cheese is melted.
5. Combine the cornstarch and water together in a small bowl and slowly stir into the soup, continue to stir until thickened. Add salt & pepper to taste.
