Ingredients

  • THE DOUGH:
  • 1 cup warm water
  • 1 packet active dry yeast (about 2 tsp)
  • 1 TBSP honey
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • 1 TBSP plus 1 tsp olive oil
  • THE TOPPINGS:
  • 1/2 pound pork side (sliced pork belly)
  • salt & pepper
  • 6 TBSP tomato paste
  • 1 TBSP soy sauce
  • 1/4 cup water
  • 4 ounces cheddar cheese, finely shredded
  • 4 ounces Montery jack cheese, finely shredded
  • 1 jalapeno, sliced
  • 1/2 cup thinly sliced red onion
  • 1 cup freshly cut pineapple pieces

Directions

  1. THE DOUGH:
  2. In a large bowl or bowl of a stand mixer combine the water, yeast, and honey. Add the flour, salt, and 1 TBSP of the oil, mix until well combined and dough pulls away from sides of bowl.
  3. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.
  4. Form the dough into a ball and place in a large bowl with the remaining 1 tsp of olive oil. Flip the dough ball around to cover in the oil then loosely cover the dough and put in a warm place to rise for about 45 minutes.
  5. THE TOPPINGS & ASSEMBLY:
  6. Preheat oven to 450°F. Lightly oil a large 16-inch pizza pan or baking sheet.
  7. Cut your pork belly into 1-inch pieces and lightly season with salt and pepper. Cook the pork belly in a skillet over medium heat until pork is cooked through. Transfer pork to a paper towel lined plate and set aside.
  8. Add the tomato paste, soy sauce, and water to a bowl and stir until well combined, set aside.
  9. Punch down the dough and stretch or roll it out onto your pizza pan. Spread the sauce evenly onto the pizza dough. Sprinkle the cheese evenly over the sauce. Top the cheese with the cooked pork belly, jalapeno, red onion, and pineapple.
  10. Bake in the preheated oven for 14 to 17 minutes or until pizza crust is golden brown.
