INGREDIENTS

  • 1 cup dried chickpeas (garbanzo beans)
  • 1/2 tsp baking soda
  • 6 cups water
  • 1/4 cup ice-cold water
  • 2 TBSP freshly squeezed lemon juice
  • 4 garlic cloves, peeled
  • 1 tsp ground cumin
  • salt & freshly ground black pepper
  • 1 TBSP tahini
  • 2 TBSP olive oil, divided



DIRECTIONS

  1. Rinse the chickpeas thoroughly.
  2. Stir together the chickpeas, baking soda, and 6 cups of water in a large saucepan over medium-high heat and bring to a boil.
  3. Place a lid on the pan and reduce the heat to medium-low. Simmer the chickpeas over medium-low for about 1 hour.
  4. Drain the chickpeas and place into a food processor and pulse into a paste.
  5. Add the ice-cold water, lemon juice, garlic, cumin, tahini, 1/2 tsp salt, and 1/4 tsp black pepper to the food processor and blend until very smooth.
  6. Transfer the hummus to a bowl and season with additional salt & pepper to taste.
  7. Stir 1 TBSP of the olive oil into the hummus then drizzle the remaining 1 TBSP of olive oil on top.
