Zucchini Feta Fritters with Mint Yogurt Sauce

Ingredients
Fritters:
2 medium zucchini
1 egg, beaten until foamy
3/4 cup feta cheese crumbles
1/4 tsp kosher salt
pinch white pepper
1/4 tsp granulated garlic
Yogurt Sauce:
1 cup plain yogurt
2 tsp mint, julienne cut
pinch salt
pinch white pepper
pinch granulated garlic
1/8 tsp honey
olive oil spray
Directions
1. Cut the zucchini using the smallest blade on the mandolin or box grater. Do not use the seeds.
2. Add the egg, feta, salt, pepper, and garlic and stir together.
3. Heat a griddle to 400 degrees or HIGH. Spray with olive oil spray.
4. Form 12- 2 inch patties with the mixture.
5. Place on griddle and cook until golden brown, then flip and cook on the other side. About 5 minutes per side.
6. In the meantime, mix all the sauce ingredients together in a small bowl.
7. Serve the fritters with the sauce.
