Easy Weeknight Chili
An easy to make chili made with ground beef and fresh vegetables.

Ingredients
- 1 pound ground beef
- 1 large red onion, diced
- 3 pounds roma tomatoes, chopped
- 1 cup water
- 4 TBSP chili powder
- 2 tsp smoked paprika
- 1 jalapeno, diced
- salt & freshly ground pepper
- optional toppings: shredded cheese, sour cream, diced onion, tortilla chips
Directions
- Add the ground beef and onion to a dutch oven or large pot over medium-high heat.
- Cook, while breaking up the beef, until the beef is browned, about 5 minutes.
- Add the tomatoes, water, chili powder, smoked paprika, jalapeno, and 2 tsp salt to the pot.
- Cook while breaking up the tomatoes until the chili begins bubbling.
- Reduce the heat to medium-low and cook, occasionally breaking up the tomatoes, for about 30 minutes.
- Increase the heat to medium and cook, stirring often, until thickened, 15 to 20 minutes.
- Season with salt & pepper to taste.
