Easy Weeknight Chili

An easy to make chili made with ground beef and fresh vegetables.

Easy Weeknight Chili recipe

Ingredients

  • 1 pound ground beef
  • 1 large red onion, diced
  • 3 pounds roma tomatoes, chopped
  • 1 cup water
  • 4 TBSP chili powder
  • 2 tsp smoked paprika
  • 1 jalapeno, diced
  • salt & freshly ground pepper
  • optional toppings: shredded cheese, sour cream, diced onion, tortilla chips



Directions

  1. Add the ground beef and onion to a dutch oven or large pot over medium-high heat.

  2. Cook, while breaking up the beef, until the beef is browned, about 5 minutes.

  3. Add the tomatoes, water, chili powder, smoked paprika, jalapeno, and 2 tsp salt to the pot.

  4. Cook while breaking up the tomatoes until the chili begins bubbling.

  5. Reduce the heat to medium-low and cook, occasionally breaking up the tomatoes, for about 30 minutes.

  6. Increase the heat to medium and cook, stirring often, until thickened, 15 to 20 minutes.

  7. Season with salt & pepper to taste.
