INGREDIENTS

  • 2 TBSP olive oil
  • 1/2 cup diced yellow onion
  • 2 medium garlic cloves, minced
  • 1 cup uncooked jasmine rice
  • 1 1/2 cups water
  • salt & freshly ground black pepper



DIRECTIONS

  1. Heat the olive oil in a medium-size saucepan over medium-high heat.
  2. Add the onion to the pan and cook, stirring often, until onion softens a bit, about 1 minute.
  3. Stir in the garlic and rice and cook while stirring, for about 10 seconds.
  4. Stir the water and 1/2 tsp salt into the pan and bring to a boil.
  5. When the water begins to boil, place a lid on the pan and reduce the heat to low.
  6. Simmer the rice over low heat for 10 minutes, DO NOT REMOVE THE LID FROM THE PAN UNTIL THE LAST STEP.
  7. Turn the heat off and let the rice sit, KEEPING THAT LID ON, for 20 minutes.
  8. Now you can remove the lid, gently fluff the rice with a fork and season with salt & pepper to taste.
