- 2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
- salt & freshly ground black pepper
- 4 TBSP unsalted butter
- 3 medium garlic cloves, peeled and minced
- 3/4 cup whole milk
- 6 ounces sharp white cheddar cheese, shredded

Directions
- Add the potatoes and 1 tsp salt to a large pot then cover completely with plenty of water and bring to a boil over medium-high heat.
- When the water begins boiling reduce the heat to medium and simmer the potatoes until tender, 10 to 15 minutes.
- Drain the potatoes and set aside.
- Place the empty pot back on the stove over low heat then melt the butter in the pot with the garlic.
- When the butter has melted stir in the milk and cook, stirring occasionally, until the milk has warmed, about 2 minutes.
- Add the cooked potatoes to the pot then use a potato masher to mash the potatoes until smooth.
- Stir in the shredded cheese until melted through then taste the potatoes and season with salt & pepper to taste.
