Directions
- Rinse the chickpeas thoroughly under cold water.
- Transfer the chickpeas to a medium size saucepan with the water.
- Bring to a boil over medium-high heat.
- When water begins to boil place a lid on the pan and reduce the heat to medium-low.
- Simmer beans over medium-low heat for 60 to 75 minutes or until beans are tender.
- Drain the chickpeas. Makes 3 cups cooked chickpeas.
