INGREDIENTS
1 cup dried chickpeas (garbanzo beans)
8 cups water

DIRECTIONS
Rinse the chickpeas thoroughly under cold water.
Transfer the chickpeas to a medium size saucepan with the water.
Bring to a boil over medium-high heat.
When water begins to boil place a lid on the pan and reduce the heat to medium-low.
Simmer beans over medium-low heat for 60 to 75 minutes or until beans are tender.
Drain the chickpeas. Makes 3 cups cooked chickpeas.
