In a large bowl mix together the beef, pork, garlic, thyme, salt, pepper, coriander, and paprika.
In a small bowl dissolve the baking soda in the soda water then mix into the beef mixture.
Form the meat mixture into small cylindrical sausage shapes roughly 4-inches long and 1-inch thick. Place the sausages into a container with a lid and refrigerate for 12 hours up to 24 hours.
Grill or pan fry sausages over medium-high heat until well browned all around and cooked through, about 10 minutes.
