Mozzarella en Carrozza
An Italian grilled cheese sandwich dipped in egg and coated in breadcrumbs then pan fried and served with a marinara sauce for dipping.

Ingredients
- MARINARA SAUCE (For Dipping):
- 2 cups (16 ounces) tomato puree
- 1 TBSP olive oil
- 1 medium garlic clove, minced
- 1 tsp dried oregano
- 1/4 tsp dried basil
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- SANDWICHES:
- 12 ounces sliced mozzarella cheese
- 8 slices sourdough bread, crusts removed
- 1 cup panko breadcrumbs
- 3 TBSP olive oil plus extra
- 1 TBSP unsalted butter
- 3 large eggs

Directions
- MARINARA SAUCE:
- Heat the oil in a saucepan over medium heat.
- Stir in the garlic, oregano, basil, red pepper flakes, and salt and cook until fragrant, just a few seconds.
- Pour in the tomato puree, reduce heat to low and cook, stirring occasionally, about 5 minutes.
- Take sauce off the heat and set aside.
- SANDWICHES:
- Lay out 4 slices of bread and evenly distribute the mozzarella slices on top of the bread slices then top with the remaining bread slices to make four sandwiches. Now cut each sandwich in half (to make 8 small sandwiches) and set aside.
- Set out 2 shallow bowls. In one bowl whisk the eggs together and in the other bowl add the breadcrumbs.
- Working one at a time carefully lay a sandwich in the egg mixture and flip to coat all over, shake off any excess egg mixture. Now lay the sandwich in the breadcrumbs and flip to coat in the breadcrumbs. Set the breaded sandwiches aside.
- In a large skillet heat the oil and butter together until hot over medium heat.
- Fry the sandwiches in the pan (2 to 3 at time, depending on the size of your pan and adding more oil if necessary) until browned on both sides, about 1 to 2 minutes per side.
- Serve the sandwiches with the marinara on the side for dipping.
