Pear and Baby Spinach Salad with Walnuts and Blue Cheese
Sliced Bartlett pears, baby spinach, red onion, walnuts, and blue cheese tossed with a pear and white balsamic dressing.

Ingredients
- 2 ripe Bartlett pears, peeled, cored and thinly sliced
- 2 TBSP olive oil
- 1 TBSP white balsamic vinegar
- dash salt
- dash pepper
- 3 ounces fresh baby spinach
- 1/2 cup thinly sliced red onion
- 1/2 cup walnut pieces
- 1/2 cup crumbled blue cheese
Directions
- Make the dressing by placing a few slices of pear (equal to about a quarter of one whole pear) into a food processor or blender along with the olive oil, balsamic, salt, and pepper. Blend until smooth and set aside.
- In a large bowl add the remaining pear slices, spinach, onion, walnut, and blue cheese.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or cover and refrigerate up to a day.
