Roasted Baby Potatoes
Baby gold potatoes tossed in olive oil, salt & pepper and roasted in the oven until crispy on the outside and tender in the middle.

Ingredients
- 1 1/2 pounds baby gold potatoes
- 2 TBSP olive oil
- 1 tsp salt
- 1/4 tsp black pepper

Directions
- Preheat the oven to 425°F.
- Place the potatoes in a large mixing bowl.
- Drizzle the oil over the potatoes and sprinkle on the salt & pepper then stir the potatoes to coat evenly.
- Spread the potatoes out in a single layer onto a rimmed baking sheet.
- Bake in the preheated oven for 20 minutes.
- Take the potatoes out of the oven and stir them around then place them back in the oven for 15 more minutes or until crispy on the outside and tender in the middle.
