Roasted Chicken Drumsticks with Cauliflower and Red Onion

Ingredients
4 pounds chicken drumsticks
1 head cauliflower, broken into florets
2 red onions, cut into 1-inch pieces
4 TBSP olive oil
2 tsp salt
1 tsp pepper
1 tsp garlic powder
Directions
1. Preheat the oven to 425°F.
2. Pat the chicken drumsticks dry with paper towels then place them in a large bowl along with the florets and onion.
3. Drizzle the oil all over the chicken and vegetables then sprinkle the salt, pepper, and garlic powder all over. Toss until the chicken and vegetables are evenly coated.
4. Spread the chicken and vegetables in a single layer onto a rimmed baking sheet.
5. Bake in the preheated oven until chicken is cooked through (an internal temperature of 165°F) and vegetables are slightly charred, about 45 minutes.
6. Take out of the oven and allow to sit for about 10 minutes before serving.
